Gooey Pecan Pie Bars

2 cups flour
1/2 cup sugar
1/8 teaspoon salt
3/4 cup butter
1 cup brown sugar
1 cup light corn syrup
1/2 cup butter
4 slightly beaten eggs
2 1/2 cups chopped pecans
1 teaspoon vanilla extract

Heat oven to 350°F. Grease 9×13 inch baking pan. Stir together flour, sugar and salt. Cut in butter till mixture resembles fine crumbs. Press evenly into prepared pan. Bake 15-18 minutes till lightly browned. In medium saucepan, combine brown sugar, corn syrup and butter. Bring to boil over medium heat, stirring constantly. Remove from heat. Gradually stir 1/2 cup of hot mixture into eggs. Return all of mixture to saucepan. Stir in pecans and vanilla. Pour over crust. Bake 30-32 minutes till filling is set. Cool in pan on rack before cutting into bars.

 

I don’t like pecan pie and can’t make one to save my life. These? These are fantastic. Not as sloppy as pecan pie. Om nom nom.
