Cranberry Waldorf Salad
Since it is still winter, fresh cranberries should be fairly easy to obtain. Normally not a huge fan of Waldorf salad, but I think it’s the mayo that is usually in it.
1 1/2 cups chopped fresh cranberries
1 cup chopped red apple
1/2 cup chopped celery
1/2 cup seedless green grapes, halved
1/2 cup chopped walnuts
2 tablespoons sugar
8 ounces vanilla yogurt
In food processor, coarsely chop cranberries. Combine all ingredients. Toss to coat. Cover and chill 2 hours. Stir just before serving.


Yeah, the mayo was a big hindrance to my enjoyment of Waldorf Salad. I should try the yoghurt :)
I overcame the mayo problem by modifying my WS. WS is usually served on a bed of lettuce. Nope. I incorporate shredded cabbage. And why have just seedless grapes? I use a can of fruit salad, drained. The juice remaining from the (mostly) drained can of fruit salad seems to transform the mayo into a more palatable dressing. I actually find it quite tasty. Oh, I also usually sprinkle some celery seed to enhance the celery aroma a wee tad. *shrugs* I like it and have gotten no complaints from family.
Otherwise, my version is a pretty ordinary WS *heh*
