Well, now I’m going to make these with Little One. She LOVES shortbread cookies.
Having just made them, I’ll say this: they aren’t much like shortbread. More like a not very sweet sugar cookie. Not bad, mind you, and very pretty. But I think it gets kneaded and messed with too much and develops too much gluten. Makes it tougher than shortbread. Of course, I did double the recipe and some recipes don’t like it when you do that. So… let me know how yours turn out!
